A new butcher shop is planned for downtown New Canaan, according to records on file with the Building Department.

To be installed in the commercial space at 15 South Ave.—between Station Eats and the Colonial Barber Shop—the new business will occupy approximately 1,000 square feet where Specs of New Canaan had stood.

No final decision has yet been name in terms of a name for the business, though with approvals it will open by Oct. 1, according to one individual involved in the project.

According to a building permit application filed Aug. 10, some $15,000 of renovation work will go into the space, including an electrical upgrade to 200 amp service, lighting and pushing out the front entrance by four feet so that it’s flush with those on either side. The contractor on that work is James Farrell Construction, with specs by PB Architects, both of Darien.

Planning and Zoning officials said in correspondence obtained by NewCanaanite.com that a building permit is to be issued though the town is requesting that a mullion be removed from the current street-facing wall so that the new main door sits centered in the storefront, and no exterior work is to begin without a re-submitted and approved plan.

The new butcher shop fills out a field of options for locals that includes the butcher at Walter Stewart’s Market, which does a brisk business at holiday time, while the two chain grocers in town also have meat departments and Pine Street Concessions has been eyeing a butcher/small market as one of its vendor tenants.
